Ingredients
- 20cm leek
- 150g (1/2 packet) tofu
- 8g bonito flake
- 2 tablespoons miso
- 1.5 teaspoon (8 dashes) ajinomoto umami seasoning
- 450ml water
Instructions
- Shred/cut the leek into small pieces.
- Microwave bonito flake for a minute on 600w without a lid and powder the flakes with hands.
- Add powdered bonito flakes and ajinomoto into water and bring to boil.
- Add leek and tofu and heat for a few minutes.
- Reduce heat to very low and add miso.
Notes
- Use natural miso without MSG/dashi for this recipe, as ajinomoto together with bonito flakes bring out the umami.
- Do not heat on high after adding miso as it loses its miso umami flavor.
